Harvested the week before, these beans are starting to show some rust. Still good to cook, or to trim and freeze for the winter!
Grown by Ferguson Farm and ready for harvest in Ontario in late summer, yellow beans (also called wax beans) are crunchy, juicy, and sweet, similar to green beans but without the chlorophyll that gives them their colour. Enjoy them raw, sautéed, roasted, or blanched into salads and casseroles; we love them cooked simply with olive oil or butter, garlic, salt, and pepper. To keep them fresh at home, refrigerate them unwashed, wrapping in a paper towel first if storing in plastic.
