Beets are the fibrous taproot of the beet plant. The skin is thin, and earthy flavoured, while the flesh is sweet and dense.

Can be eaten raw as a crunchy addition in a salad. Roasted, steamed, sauteed and pickled are also popular ways to enjoy! During the harvesting months, the greens are wonderful steamed or sauteed, or even added to a soup or stew.

Beets were first domesticated in the ancient Middle East for their greens. It was soon discovered that the deep reddish purple beetroot was a delicious vegetable that became popular across Europe before being cultivated in North America by the 18th century.
