Green Ball Zucchini, more commonly referred to as Eight Ball Squash, is a hybrid of zucchini. It is smaller and round in shape with dark green skin flecked with pale green and a creamy coloured inner flesh. This summer squash is nutty and sweet when smaller, similar to common zucchini but can be slightly bitter or more woody when larger.
Green Ball Zucchini can be enjoyed raw or can be grilled. Due to its small round shape, it is excellent for stuffing with meat and rice. It can also be steamed, baked, roasted or grilled like other summer squash. Dice and stir-fry or saute with garlic, onions, fresh herbs and spices. Slice thinly, layer with other sliced summer vegetables and bake.
Zucchini descends from squashes first domesticated in Mesoamerica over 7,000 years ago. Zucchini can be found in many different varieties, shapes, and colours, from yellow to green to gray and from long to short and round.
