Annabelle Fingerling potatoes are an early season variety that is short, stubby, and elongated, much like a finger (hence the name). They have a yellow flesh and a think, yellow-brown skin. Annabelle potatoes were developed in the Nertherlands and are ready for harvest in Ontario in late summer.
Annabelle Fingerlings are excellent for salads, boiling, and can be roasted. Potatoes purchased in supermarkets are often treated with chemicals to prevent sprouting (or “eyes”). These potatoes have been harvested in the Fall and are NOT chemically treated and are considered to be alive. When properly stored, sprout growth is minimal, but if sprouting happens, simply remove them and cook as usual! Potatoes that are not stored in a dark, 7-8 degree Celsius place are best enjoyed within 2 weeks.
