One of the main varieties used by McDonald's for their fries, along with Russet Burbank.

Shepody potatoes are a medium sized tuber with smooth, lightly netted buff-white skin and white flesh with a medium-high specific gravity and high starch. They make good fries, and fry up lighter than Russet Burbank potatoes. They are not good for making chips, but can be boiled, baked, mashed, and roasted. The cooked into a light and creamy texture.

This cultivar is the result of a cross from the "Bake-King" variety, and was released by Agriculture Canada- New Brunswick to the commercial market in 1980. This variety is widely grown in Eastern Canada and the Northern USA potato growing areas, primarily for the frozen french fry market. They have been specifically engineered for Canada's short growing season.
