Banana Fingerling potatoes are a banana-shaped elongated late maturing potato with light yellow skin and a creamy yellow flesh. They are short, stubby, and shaped much like a finger (hence the name). Banana Fingerlings have been grown in British Columbia for at least 90 years, and are thought to have been introduced to the early settlers of that region by Russian settlers. If that is the case, then these fingerlings originated in the Baltic region of Northeastern Europe. Banana Fingerlings are available for harvest in Ontario in late summer.

Banana Fingerling potatoes are excellent for salads, but can be boiled and roasted as well. Potatoes purchased in supermarkets are often treated with chemicals to prevent sprouting (or “eyes”). These potatoes have been harvested in the Fall and are NOT chemically treated and are considered to be alive. When properly stored, sprout growth is minimal, but if sprouting happens, simply remove them and cook as usual! Potatoes that are not stored in a dark, 7-8 degree Celsius place are best enjoyed within 2 weeks.
